16 ounces diced sweet potatoes

1 tbsp olive oil

1 tbsp garlic salt

1 pound extra lean ground turkey

1 red bell pepper

1 yellow onion

3 cloves garlic, diced

2 tbsp. chili powder

2 tbsp. cumin

2 tbsp. paprika

2 tbsp. brown sugar

2 tbsp. cocoa powder

15 ounces diced tomatoes

22 ounces crushed tomatoes

Sliced green onions for garnish

Choose either 1 tbsp. cheddar cheese OR 2 tbsp. light sour cream to top each serving.

Preheat oven to 375 degrees. Drizzle olive oil and sprinkle garlic salt over diced sweet potatoes and toss until evenly coated. Place in oven and cook until tender, about 20-30 minutes. Remove when done.

Meanwhile, in large pot add diced bell pepper, diced onion and minced garlic, cook on medium heat until softened. Add ground turkey to veggies and use spatula to break up as it browns. Once cooked thoroughly, add all other ingredients and stir together reducing heat to medium-low. Let simmer for 20 minutes stirring occasionally.

To serve, place 3.5 ounces sweet potatoes on bottom of bowl, and then top with ¼ of the entire chili recipe! Add either cheese or sour cream with green onion if desired.
