1 pound deveined jumbo shrimp

1 tbsp mild jerk seasoning

½ tbsp butter or coconut oil

½ cup green onions

½ cup chopped bell pepper

½ cup chopped yellow onion

½ scotch bonet pepper, seeded and diced

1 cup light coconut milk

Cilantro for garnish

 

Season shrimp with jerk seasoning in bowl. Heat large skillet on medium low heat and add butter or oil. Then add chopped veggies and soften for 3-4 minutes.

Add shrimp to the skillet and increase heat to medium and cook additional 3 minutes. Add coconut milk and cover to simmer for additional 3 minutes.

Garnish with cilantro or scallions!
