1.5 tbsp olive oil
2 cups brussel sprouts (washed and halved) 12 ounces small diced sweet potatoes
1 large sliced red pepper
1⁄2 sliced onion
1⁄2 tsp cinnamon
1⁄2 tsp cajun seasoning
2 tbsp honey
4 tbsp balsamic vinegar
12 ounces cubed turkey breast
Salt and pepper to taste
Heat large skillet over medium heat and heat olive oil.
Add brussel sprouts and sweet potatoes, stir until softened and cooked to your liking. Stir in bell pepper, onion, cinnamon, cajun seasoning, honey, balsamic vinegar and ham or turkey. Cook and stir occasionally until veggies are softened and evenly coated with flavors.
