Cauliflower is all the rage in the diet and nutrition world right now. From simple cauliflower rice, to “bread” sticks and crust on pizza, this nutrient rich veggie, is a perfect substitute to save on both calories and carbs. For Mom’s out there, this is a great way to sneak in veggies, often without the kids even realizing it!

Pretty amazing, right?

This Chicken Enchilada Cauliflower Rice Casserole is a lightened up, comfort food favorite that is ready in less than an hour and sure to be a family favorite.

Chicken Enchilada Cauliflower Rice Casserole 

Makes 6 servings! 

1 lb. shredded chicken

1 Tbsp. olive oil

6 cups cauliflower rice

1 (15 oz) can corn, drained

1 (15 oz) can black beans, rinsed and drained

1 medium tomato diced

1 (28 oz) can red enchilada sauce (see below if you would prefer to make your own enchilada sauce)

1/2-1 cup shredded Monterrey jack cheese

1/2-1 cup shredded cheddar cheese

Enchilada Sauce

2 Tbsp. extra virgin olive oil

2 Tbsp. flour

3 Tbsp. chili powder

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. cumin

1/4 tsp. salt (if using boxed broth taste first before adding)

2 cups chicken broth

Optional Toppings: 


Shredded Lettuce

Black Olives

Sliced Avocado

Sour Cream


Preheat oven to 375°F.

If you are making homemade enchilada sauce, heat the oil in a small saucepan over med/low heat. Add the flour and whisk for approx. 1 minute add all the spices and stir. Gradually and slowly add the broth, whisking to prevent any lumps. Simmer, stirring occasionally, for 15 minutes or until enchilada sauce thickens. Set aside.

Add approximately 1 cup of enchilada sauce to chicken and stir until evenly mixed. Set aside. In a large skillet, add olive oil and bring to medium high heat. Add in the cauliflower rice. Cook cauliflower until tender. Drain any liquid released from cauliflower. Add in corn, black beans, and tomato. Pour in remaining enchilada sauce and stir until everything is evenly coated. Pour cauliflower mixture into a 9 x 12 inch casserole pan. Spread chicken across surface. Sprinkle cheese over top. Bake for about 20-30 minutes, or until everything is heated and cheese is melted and bubbling.

Garnish with toppings of choice!
