Sauce:

2 garlic cloves

2 tbsp ginger root

2 cups chicken broth

¼ lime juice

1 tbsp cornstarch or arrowroot powder

¼ tsp cayenne

½ sea salt

¼ cup red wine vinegar

To make sauce, add all ingredients (except cornstarch) in sauce pan and let simmer until it gently simmers. To thicken sauce, remove ¼ cup of warmed sauce and add cornstarch. Mix together until incorporated, then add back into the sauce pan. Let sauce cool and place in storage container.

Shrimp and spices:

2 tsp cajun seasoning

1 tbsp chili powder

1 tbsp smoked paprika

1 tsp cumin

12 ounces of medium shrimp, peeled and deveined

In medium bowl, add shrimp and spices. Toss until shrimp is coated, set aside.

*Shrimp can be replaced with white fish or chicken breast, if desired.

Veggies:

1/2 tbsp coconut oil

1 large onion, sliced

1 red bell pepper, sliced

1 cup fresh green beans, halved

½ cup whole cashews

In large skillet on medium-high heat, melt coconut oil then add veggies and cashews, then cook 5-8 minutes until softened. Add clean seasoned shrimp to skillet with ½ cup sauce and stir until shrimp in opaque. Enjoy!
